At Clock Peaks we focus on Arabica coffee bean varieties, mostly from Africa countries such as Ethiopia, Uganda, Rwanda and Tanzania.
OUR PRODUCTION PROCESS
The finer things in life are not meant to be done in mass amounts.
- Equipment – We use the Genio 6 Artisan Pro intelligent roaster which is the latest generation state-of-the-art production shop roasters from Genio Roasters developed and built in South Africa.
- Roasting – Our Cropster Ready machine are the eyes and ears in the drum. Roasting profiles are tracked, logged and visualized.
- Coffee lab – Cupping is one of the coffee tasting techniques used by cuppers to evaluate coffee aroma and the flavour profile of a coffee. Cropster software will also assist us in managing our coffee samples and qualities in a way that will improve our decision making and introduce new efficiencies in our coffee lab.
- All our coffees are roasted in small batches to ensure attention to detail with each batch scrutinized before and after roasting.
